
GREEN OLIVES
One of the most famous varieties of edible olives in Greece is the Green Olive. It is harvested between September and October and a specific production process is followed, which allow the delicious aspects of this precious fruit. These olives have a bright green-yellow color, a distinctive fruity aroma, a slightly bitter-spicy taste, with a lack of fats and are characterized by their large size.

KALAMATA OLIVES
Kalamata are an excellent variety of table olives. The fruit is harvested ripe from November to December. This variety is also the most famous table olive in the world. Kalamata olives have a chocolate to dark brown-violet color, they are compact and crunchy with a discreet fruity taste, which is also salty, slightly bitter and sour.

BLACK OLIVES
Black olives are harvested from the trees from mid-November to mid-January. The fruit is ripe when picked from the tree. Studies show that black olives contain more phenolic compounds.

Blonde olives are harvested from the trees from late October to late November. They are prepared with the traditional, natural way of processing, which for centuries guarantees the high nutritional value of the product. The secretion of these olives is not based on the use of caustic soda but on the natural extraction of part of eleuropein from the core of the olive, in brine.
